Logs
While logging chat, IP's and system specs is not needed (for the most part) i'd urge you to reconsider logging other data.
Depending on whether or not you will be offering any kind of support in the future, logging serverwide public channels (such as broadcast and help for example) as well as system logs (system, quests, etc) would be incredibly helpful to have on hand. All of these can help fix possible issues for players, and they will also help you combat abuse, cheating and - if the server becomes popular enough - gold farm/selling activities. None of these logs would form an issue GDPR wise as they can be considered necessary to make sure the servers can run correctly, if that's what you're worried about.

Permanence
The question of permanence of the servers and characters is being brought up again since Excelsior’s launch. The statement that we made on this topic yesterday still stands true for both shards; the short answer is that we do not know yet.
Our primary long-term goal is still to ensure that the community has a stable server that we can all enjoy together in perpetuity. Right now we cannot say if his server will be that, but we are not closed off to that possibility. If for whatever reason that primary goal requires us to shut this server down or wipe the character database, then we will do that.
Outside of fulfilling that goal, we don’t foresee any reason why a character wipe would need to occur.
I'm going to get flak for this, but i think you should just announce at the current servers are just test servers, and will be wiped.
You're still working out the kinks, and i25 is still unknown territory, even for the coders, especially as long as its source isn't really accessible. Throwing your eggs in this specific basket, when you don't even know whether you can expand on it, is probably a risk you may not want to take.
I think it's best to keep trying stuff out for now: Keep the intents and promises about wipes for until you can definitively announce a permanent setup. This will likely take a non-insignificant pressure off your back :)
Homecoming Server Update (May 7th): Donations

I've only had bad experiences with them. Seeing that name in the OP was a bit of a shock tbh.
I've heard people getting their servers blocked without getting notified why, and when they requested an unblock they were denied. But, they were still expected to pay up despite losing access to their data. Their backups are also unreliable, if they're even there at all.
When it comes to Europe, OVH, Strato and Servage are companies to absolutely avoid at all costs imho.
