LiquidBandage
Also, Inv/Dark/Mu Mastery Tank is tons of fun. The experiences of diving into large packs is the closest I have come to the old old days of dumpster diving. If you like Brutes, this will be right in your wheel house.

It is the one Empathy AT where you can really play as a ‘team support’, even when solo. While Defenders have better pure support numbers, they can’t utilise the full toolkit while solo like a MM can. Any of the support sets that focus more on empowering allies are really fun as a MM. /Thermal looks the most fun to me but I haven’t played it high yet. It's not empathy, but one of my favorite characters is a nature MM whose primary is...mercs (yes, mercs). I play him as pure support. The troops have macros that split them into groups so I can set them so their cones spread -def debuffs around like they're Mardi Gras beads. Meanwhile my character runs around dropping heals, rezzes, and all the other targeted nature buffs.
TheOtherTed
My buffet recommendation would be a Dark Armor tank. Turn on Cloak of Fear and Oppressive Gloom, jump into a spawn, and watch 'em all shirk in fear or stumble like zombies. Oh, proper ones will curl their noses*, but you'll feel like a force of nature. As for ATs that I haven't given a fair shot, I'd say Masterminds. I loved the idea of them, but none of the powersets I tried really grabbed me. The longest run I did was a Beam Rifle/Robot MM, but that only lasted a week, and only because I got a kick out of the character concept. *credit to Skyrim for the half-quote
Infinitum
My favorites out of the box (for me): Fire EM Tanker - can be built fairly strong but my gah the burst dmg ST and Decent AOE to boot. Beam Rifle Ninjitsu flight Sentinel - debuffs - dmg boosts - hover blast without any real danger. Elec/Storm Troller - i have taken this buind into +4/8 fire farms and literally hovered as close to the ground as you can get right in the middle of the chaos and neutered the whole lot of em. Slowish in taking them out but fun to watch them powerless to effect me. Em/Energy Stalker - best ST boss killer in the game. Melts things with burst and attack cycling
Spaghetti Betty
My vote is gonna be for a Fire/Dark Tank. I just recently rolled one of these bad boys out and got it to a pretty high lvl (47, before altitis hit again). It just works. It will have you wondering why anyone would say Tankers are low damage. It's actually pretty damn safe for Fire Armor, and despite the obvious holes (no KB protection), you can pretty much go nuts with IO slotting. Since I can rotate Consume and Dark Consumption, I just loaded them up with damage procs. Between those and Burn, the AoE damage is ridiculous. Mainly on Excelsior. Find me in game @Spaghetti Betty. Hyperstrike
Buffett? Jimmy or Warren? If you want to be godlike, pick anything. If you want to be GOD, pick a TANK!

What are the archetypes/sets you've just never gotten around to trying, but someone might be able to persuade you. To the first question, I was pleasantly surprised how my bio armor/savage melee tanker turned out. I was also a little taken aback at how much fun I had playing my fire/regen sentinel. Regarding the second question - I've tried every AT, but I just cannot get into dominators - perhaps it is my aversion to delve too deeply into the IO meta-game to achieve perma-dom status. I also haven't created too many corruptors, as I just don't see a compelling reason to play them over defenders.
